As far as it goes, It doesn't look like i could make an 'honest trade' system any time soon because what I'd need is to take a single inventory screen and then create permissions within it. I don't think bukkit has any event notifications set up for when the inventory is adjusted though i will keep looking at this, + I have the issue of letting them see their inventory and what they are trading. possibly figuring out more with the crafting box would work but i don't know how i'd let the other person see what was being given to them.

EDIT: I'm feeling silly now. I was going to download bukkit this morning (i've been looking at hte api so far) and the site http://bamboo.lukegb.com/browse/BUKKIT doesn't seem to have any links to download it.
