I'm wondering how I'm able to get rotten flesh, any help appreciated.

Zombies should spawn if your light level is low enough on your island. You will be able to get bones from skeletons that way as well.

Make a mob farm! Just make sure it's high enough so that when the mobs drop down, they die and you get the items. There is no spawner needed, just a low enough light level.

I've read that height is 23 bricks? Or is that only so that you can one-hit them after that?

I guess going higher wouldn't hurt anything.
