I'm getting an "outdated server" message when I try to log on to MineTown, but from here, it looks like others are able to log in.

What am I doing wrong?

If you're not using 1.9.2 you need to be signed in using that client to connect.

I'm on 1.9.4... it must have updated automatically. Is there any easy way to go back to 1.9.2 and not have it update automatically again?

When you log in to minecraft look in the bottom left corner where it says "profile". Click there to open that up. I bet your profile is set to "use latest version of minecraft". Change that to say "use version 1.92" or whatever is closest to what that says. Save and then launch game. Let us know if that doesn't work
