Can minetown eventually "run out of space"? Also another question, if the guest world is reset every week, theoretically you could just go back to the same cave every week and get unlimited resources then right?

If guest world was actually reset as often as claimed (it's not) it doesn't have to be regenerated with same seed. This would prevent "Same Cave" scenarios.
