Somehow, going through a nether portal has taken me to the roof of the nether, and my Application has been approved (thanks Danni!), but i'm still marked as a guest, meaning I cant teleport to the spawn, meaning i'm stuck here. Does the server just need time to update its player list from guest to member?

Give it a few, my application from guest to member was fairly quick in updating me so I guess it just depends
